Organic Basil and Heirloom Tomato Inspirations.....












When I was out shopping this weekend, I saw they had organic basil and organic heirloom tomatoes, so of course I had to pick some up. So I was inspired to make basil pesto with a tomato salad. I made the basil pesto with pine nuts, garlic, basil and Parmesan cheese. I dressed some organic garden pasta with the garlicky pesto. I made the tomato salad with the heirloom tomatoes, hot house cucumber, chopped red onion and pine nuts. I dressed it with a balsamic and olive oil dressing.

I took a small hike today, it was a small hill, but a start. The purpose of this blog is to document my healthy culinary adventures in vegetarian and vegan cooking, my progress in meeting some personal goals, such as loosing forty pounds, getting myself in shape to hike some of the cool trails we have here in Arizona and to document the cool things I like to do in my spare time.
