When I was out shopping this weekend, I saw they had organic basil and organic heirloom tomatoes, so of course I had to pick some up. So I was inspired to make basil pesto with a tomato salad. I made the basil pesto with pine nuts, garlic, basil and Parmesan cheese. I dressed some organic garden pasta with the garlicky pesto. I made the tomato salad with the heirloom tomatoes, hot house cucumber, chopped red onion and pine nuts. I dressed it with a balsamic and olive oil dressing.
